Curry Crazy

Happy New Year!

Cannot believe 2017 is already here. So many goals to accomplish and I wish you all many blessings!

For my first blog of 2017, I wanted to show you my favorite recipe I’ve been cooking for the past few months – coconut chicken curry.

Believe it or not, I’ve only been to one Indian restaurant in my entire life but I’ve always loved the smell and taste of curry but wanted to put my own spin on it. I feel like I’ve perfected my recipe. 

I added coconut milk because it adds a really subtle warmness and flavor to the bold, spiciness to the curry. I was lucky enough to score authentic Jamaican curry powder from the islands thanks to my parents- they visited Jamaica for a wedding and spices were my only request.  


I also found a cute Jamaican spot off of Crenshaw Blvd where I scored some more curry powder – jackpot. I actually used both this time around and the result was awesome.


Recipe:

Prep time: 15 min         Cook time: 1 hour

  • 2lbs chicken breast
  • Red & green bell peppers, diced
  • Diced onion
  • Minced garlic
  • Potatoes, skinned & cubed 
  • Curry powder (I don’t really measure how much lol I go by taste. Guessing, I probably use a couple tablespoons)
  • Water, about a cup
  • Coconut milk
  • Olive oil, two tablespoons 
  1. First you want to sauté your veggies and garlic in olive oil just until your onions become transparent, then add your chicken 
  2. Once your chicken is done, add your curry powder, water, and coconut milk to taste. You want it to look like the pic above.
  3. I cook mine on low for 45 minutes so the chicken becomes tender and the flavors mesh together perfectly. I also add Sriracha for more spice and corn starch if I feel the consistency isn’t right.

I like my curry nice and thick. Serve warm with white or brown rice.

I am a lover of all things good, whether it be a nice at home cooked meal or a hip dive bar selling bomb food. I don’t discriminate! 

For 2017, I promise to have better foodie posts and pics for you to be jelly off along with recipes from my own kitchen. For now, indulge in my food capades over this past year. Couldn’t have done it without my partner in crime, my boyfriend Karras.

First up, Taste on Melrose Ave. 


We stumbled on this beauty while driving around Melrose fan girling over all the designer shops lol. Mimosas and pasta? Hell yea. 

Next, is Bruxie in Chino Hills.


I actually read up on this spot in my hometown of Sacramento and it wasn’t until Karras bugged me to go, that’s when I finally tried it and loved it. Haven’t been in months but a trip is long over due. I’ve only tried the Original but I wasn’t too interested in the other combinations. 

OK OK OK..if you don’t try this spot out, I can’t sit with you!! The Burger House in Pomona.


Shit is so fire, I had to put two pics LOL. I am a burger enthusiast. I could live off of burgers..that’s how pathetic I am. By far, me and Karras’s FAV burger joint right in the middle of downtown Pomona. It’s small and quaint but the burgers speak for themselves. Who puts a whole soft shell crab on top of a patty?! Their beers are local, quirky, and fresh off tap while still matching burgers on the menu. Just go!

I’m gonna end with dessert, duh. Cream in my hometown of Sacramento. I mean, you see the pic..waffle ice cream sandwich? Crazy good! Locations are in SoCal as well.

And CottonHi in DTLA. My best friend Jessica put me on to this place and it didn’t disappoint. Cotton candy on top of ice cream..WTF. Didn’t last 10 minutes!
